Hot & Spicy Chicken Bites

Original Recipe - “Mary Berry - At Home”

Makes 12

Ingredients

  • 1 Boneless, skinless chicken breast
  • 1 tablespoon sweet chilli sauce
  • 1 tablespoon soy sauce
  • 1 good teaspoon red Thai curry paste
  • Salt and freshly ground black pepper
  • 2 tablespoons sunflower oil

Method

Prepare ahead and let them marinate.

  1. You will need 12 wooden cocktail skewers, soaked in water if you’ve not used them before. Slice the chicken breast into 12 thin strips.

  2. Measure the sweet chilli sauce, soy sauce and Thai paste into a small bowl and stir together. Season with a little salt and pepper. Add the chicken strips and leave to marinate in the fridge for a minimum of 1 hour or overnight.

  3. Thread the marinated chicken strips on to cocktail skewers.

  4. Heat the oil in a non-stick frying pan. Fry the chicken skewers for about 5 minutes, turning the skewers around so they are golden brown all over and cooked through. Serve hot.
