Turkey and Cranberry Meat Loaf

Original Recipe - from Mum & Dad
Can be served hot or cold.
A further variation can be made by substituting pork mince and a small diced cooking Apple instead of the cranberries.
Serves four
Ingredients
- 450 grams Turkey Mince or thereabouts
- 4 Rashers of Lean Bacon chopped
- 1 medium Onion Diced
- 1 Clove of Garlic
- 1 Egg
- 50 grams Dried Cranberries
- Pinch of salt and pepper if wanted
Method
- Pre heat the oven to 180°C (gas mark 5)
- In a large bowl put the mince chopped bacon, crushed garlic, onion and egg with salt and pepper. Combine together by hand or wooden spoon.
- Put the mixture into a large loaf tin and cover with Aluminium foil. Bake for 45 to 60 minutes then remove the tin foil cover, there may be some fluid in meat loaf, pour this off before returning to the oven for a further 15 minutes to brown the top.
