Tomato Basil Couscous Salad

Italian Couscous is an easy side dish recipe perfect for serving with any meal. Sun dried tomatoes, garlic and pinenuts spruce up the dish!

Original Recipe

Ingredients

  • 1 heaping cup couscous
  • 1 cup low sodium chicken broth
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons basil leaves coarsely chopped
  • 1/2 cup sun dried tomatoes packed in olive oil coarsely chopped
  • 2 garlic gloves crushed
  • 1/4 cup pine nuts toasted

Our Method

  1. Poor 5oz couscous (for 2 people) into a bowl
  2. Crumble stock cub in
  3. Poor in boiling water to cover couscous by approximately 1cm
  4. Leave for 10 minutes
  5. Fluff up with a fork and serve

Original Recipe Method

  1. In a medium sauce pan, bring chicken broth and olive oil to a low boil.
  2. As soon as water comes to a low boil, remove from heat and add couscous. Cover and set aside for 5 minutes.
  3. Remove lid and fluff with a fork. Add basil, sun dried tomatoes, garlic and pine nuts. Fluff again. Cover for an additional 3 minutes.
  4. Serve warm and enjoy your Italian Couscous!
