Original recipe: Jamie’s comfort food - Gnocchi & squash sauce.
Although we just use the sauce on pasta. Just cook the pasta and add the sauce on top.
Ingredients
- 1 butternut squash (1.2kg)
- 4 cloves garlic
- 1 fresh red chilli
- 4 sprigs of fresh rosemary
- olive oil
- 1 Vegetable stock cube
- Parmesan cheese
Method
Just for the sauce
- Peel the squash, carefully cut it in half lengthways and deseed, then slice 1/2cm thick.
- Peel the garlic, then finely chop it with the chilli and rosemary leaves and put into a large casserole pan on a medium heat with a lug of oil to fry for 1 minute.
- Add the squash, crumble in the stock cube and cover with 500ml of boiling water.
- Simmer with the lid on for 25 to 30 minutes, or until the squash breaks up and you have a lovely, thick sauce consistency, stirring occasionally, then season to perfection.
