Pasta & Squash sauce

Original recipe: Jamie’s comfort food - Gnocchi & squash sauce.

Although we just use the sauce on pasta. Just cook the pasta and add the sauce on top.

Ingredients

  • 1 butternut squash (1.2kg)
  • 4 cloves garlic
  • 1 fresh red chilli
  • 4 sprigs of fresh rosemary
  • olive oil
  • 1 Vegetable stock cube
  • Parmesan cheese

Method

Just for the sauce

  1. Peel the squash, carefully cut it in half lengthways and deseed, then slice 1/2cm thick.
  2. Peel the garlic, then finely chop it with the chilli and rosemary leaves and put into a large casserole pan on a medium heat with a lug of oil to fry for 1 minute.
  3. Add the squash, crumble in the stock cube and cover with 500ml of boiling water.
  4. Simmer with the lid on for 25 to 30 minutes, or until the squash breaks up and you have a lovely, thick sauce consistency, stirring occasionally, then season to perfection.
