Original Recipe

Ingredients

  • 500g Jersey new potatoes. Do not peel
  • 1 clove garlic.
  • 1 finely sliced red onion
  • 100g sliced mushrooms
  • 1 large carrot cut into fine strips.
  • 1 Red pepper finely sliced
  • 100g mange tout
  • 15ml soy sauce

Method

  1. Cook potatoes in a pan of boiling water for about 15 minutes, they should just be cooked. Drain
  2. Heat 15ml olive oil in a wok or large frying pan. Add crushed garlic, onion, mushrooms, carrot and stir-fry for a few minutes.
  3. Add pepper and mange tout to the stir-fry with quartered potatoes and soy sauce. Continue to cook until pipping hot.
