Hot jersey new potato stir fry

Ingredients
- 500g Jersey new potatoes. Do not peel
- 1 clove garlic.
- 1 finely sliced red onion
- 100g sliced mushrooms
- 1 large carrot cut into fine strips.
- 1 Red pepper finely sliced
- 100g mange tout
- 15ml soy sauce
Method
- Cook potatoes in a pan of boiling water for about 15 minutes, they should just be cooked. Drain
- Heat 15ml olive oil in a wok or large frying pan. Add crushed garlic, onion, mushrooms, carrot and stir-fry for a few minutes.
- Add pepper and mange tout to the stir-fry with quartered potatoes and soy sauce. Continue to cook until pipping hot.
